Plain Dark Chocolate Crepes

  1. (Recipe for 10-12 crapes)
  2. 250 g plain flour
  3. 4 dl milk
  4. 1 dl mineral water
  5. 3 eggs
  6. 70 g dark chocolate
  7. 2 tablespoons cocoa
  8. pinch of salt
  9. 1 tablespoon melted butter
  10. coconut oil for cooking
  1. Melt chocolate over steam, add a teaspoon of butter. Mix well until a uniform mixture is obtained.
  2. Sift flour and cocoa into a bowl.
  3. Whisk egg, oil and milk together in a jug. Gradually add egg mixture to flour mixture, whisking until smooth and combined. Add melted chocolate. Mix well. Cover. Set aside for at least 30 minutes.
  4. Spray an 18cm (base) non-stick frying pan with oil. Heat over medium heat. Pour 1/4 cup batter into pan. Swirl to cover base. Swirl to cover base. Cook for 2 minutes or until light golden. Turn. Cook for 1 minute. Transfer to a plate. Cover to keep warm. Repeat with remaining mixture to make 10-12 crepes.
