Raw Apple Pie

CRUST
  1. 150 g walnuts or almonds
  2. 150 g coconut flour
  3. 100 g medjool dates, pitted
  4. 3 tablespoons coconut oil
  5. pinch of salt
  6. 1 teaspoon vanilla powder
FILLING
  1. 3 apples
  2. 2 tablespoons raisins
  3. 180 g medjool dates, pitted
  4. juice of 1/2 lemon
  5. 1 teaspoon cinnamon
  6. 1 teaspoon vanilla powder
TOPPING
  1. flaked almonds
  2. whipped coconut cream
CRUST
  1. Place almonds/walnuts in a food processor and process until mixture resembles flour. Add coconut flour, dates, salt, vanilla powder and coconut oil to the food processor and process just until combined. Press the mixture into a 9-inch glass pie pan. The crust may be made ahead of time and refrigerated or frozen.
FILLING
  1. Cut 1 apple into small cubes. Place 2 apples, lemon juice, cinnamon, dates, and vanilla powder in a food processor. Process the mixture until it is almost the consistency of applesauce. Add raisins and apple cubes to the mixing bowl. The raisins will soak up the juice from the apples. Pour the apple mixture into the prepared pie crust.
  2. Top with the flaked almonds.
  3. Serve cold with some whipped coconut cream.
